I’m a cheesehead

I have confessed. I can no longer deny my problem. Someone, please help me.

When I say cheesehead, I of am course not referring to that north-o-the-border football team. Eww. Rather, I am admitting my obsessive need to consume the fattening, creamy, melty deliciousness that is cheese. Pepperjack, brick, brie, Swiss, colby jack, mozzarella, butterkase, feta, parmesan. The list goes on. No salad, sandwich, cracker, or snack is complete without cheese.

It may be the only reason that a size 6 is out of reach.

But my favorite cheese? The slice of ultimate tastebud euphoria? A Dutch cheese called havarti. Oh.My.God. People: I cannot tell you how good it is. I could eat an entire brick in one sitting. I would get into a fistfight over the last slice at a dinner party. It is pretty much ambrosia.

Havarti grilled cheese makes for an easy, delicious weeknight meal.

While you can enjoy havarti entirely plain in its own personal goodness, I think that it makes the best grilled cheese sandwiches in the entire world. It gets so melty and its buttery taste pairs perfectly with a grainy bread. Fry it up and serve with tomato soup to create a simple but heavenly weeknight meal.

Havarti can be found in most grocers by the fancier cheeses (often near the deli). The price is a bit steeper than standard fare, but I pinky promise it is worth it. Don’t thank me. Just pass on this cheesy perfection to all the cheeseheads in your life.

Havarti grilled cheese
2 slices bread (I use whole grain or wheat)
1-2 T. butter
4 slices havarti cheese

Butter one side of each slice of bread. Place one slice butter side down on a skillet over medium heat. Arrange cheese on bread. Place other slice of bread butter side up. Flip when toasted. Serve with steaming tomato soup and a glass of milk for an amazing dinner that will please the whole family.
