Matzah Brie (Fried Matzah)

If you were not aware, the Jewish holiday of Passover is currently being celebrated. Passover started at sunset this past Saturday (April 19) and lasts until nightfall on April 27. During Pesach you remove all unleavened products to remember when the Jews leaving for Egypt were in such a hurry there was not enough time for the bread to rise, which is why we eat matzah during this time. Removing bread can be hard for many people, but there are tons of Passover friendly recipes available to spice up your week without bread and other leavened products.

Matzah Brie (Fried Matzah)

Ingredients

-4 pieces matzah

-4 eggs

-2 Tbs. milk

-1 Tbs. Butter

-Salt and pepper to taste

Directions

-Break up matzah and soak in water for a few minutes. In another bowl, combine eggs, milk, salt and pepper and whisk until combined. Add in matzah and stir until all combined.

-Heat a fry pan with the butter and add the matzah mixture. Cook until desired texture, using a spatula to move matzah around and avoid burning. Taste and season if neccesary.

-Serve with jelly if desired.
