Chicken with green beans

Being college students, sometimes we have to get creative with recipes (that is, when we have time to utilize them). Much of this need has to do with budget. Other times, creative inspiration for dishes comes from home. My sister recently gave me a recipe that is reminiscent of a dish our mom prepares when we visit her. Instead of pork, which finds its way into many meals from mom, we make it with chicken. Chicken with green beans provides a healthy way to fulfill the protein and green-colored food quota for the day.
Chicken with Green Beans
Ingredients:
Chicken breasts (2-3, cut into bite-sized strips)
Green beans (about 1 ½ cups)
Onion (half an onion, minced)
Ginger (about 1 Tbsp.)
Mirin
Soy Sauce
Sesame oil
Corn starch
Chili flakes
Salt and pepper
Preparation:
Bring water to a boil in a medium saucepan. When water boils, add green beans and allow them to cook for about 7 minutes. Meanwhile, slice the chicken breasts and prepare the onion and ginger. When beans are done, drain in colander and salt for flavor. Then season chicken with salt and pepper and chili flakes and set aside. In a skillet or wok, add some sesame oil and cook the onion and ginger to soften, about 3-5 minutes. Add the chicken. Let chicken cook, and prepare seasoned sauce by adding two parts mirin (about a tablespoon of each) to one part soy sauce and a teaspoon of corn starch to thicken. Stir and add to skillet after chicken has browned and cooked along with the green beans. Stir the chicken and green bean mixture, allowing the sauce to thicken and flavors to blend together. Cook for a few minutes and then serve over steamed jasmine rice.
