Now one of the world’s most popular fruits, bananas originated in Malaysia and were once considered a rare and exotic treat. They boast tremendous health benefits, most notably their high potassium concentration. Bananas are extremely versatile and can be enjoyed many different ways. Top your cereal with bananas, eat them with peanut butter, fry them up, or grab one when you’re on the go. Bananas are also great for baking. It’s not very often that you can turn around rotting food into something fantastic like banana bread.
Mom’s Banana Bread Recipe:
1/2 cup Butter
1 ½ cups Sugar
2 eggs
3 large Ripe Bananas
1 Tbs. Vanilla
1 teaspoon salt
2 cups flour
1 teaspoon baking soda
1/2 cup sour cream
3/4 cup chopped nuts or mini chocolate chips
Preheat oven to 350 degrees. Cream butter and sugar. Beat in eggs. Add bananas, vanilla and salt to creamed mixture and mix well. In a separate bowl, combine sour cream and baking soda and beat briefly with an electric hand mixer until fluffy. Add flour alternately to batter with sour cream mixture. Start and end with dry ingredients. Stir in nuts or chocolate chips.
Pour mixture into two (greased) nine x five loaf pans, or into four (greased) mini loaf pans. Bake approximately 20-40 minutes depending on pan size. Test with wooden toothpick to make sure it’s done.
