Who doesn’t love breakfast? One of my favorite meals is to make breakfast for dinner. Try these pancakes with some eggs, hash browns and sausage or bacon, and you have one delicious breakfast or dinner!

Apple Cinnamon Buttermilk Pancakes

Ingredients:

1 teaspoon baking soda

2 cups flour

2 teaspoons baking powder

2-3 tablespoons brown sugar

1 teaspoon salt

1 teaspoon ground cinnamon

2 large eggs, beaten

1 1/2 cups buttermilk

1/2 cup sour cream

1/4 cup butter or margarine, melted

1 large apple, peeled, cored and grated

Directions:

1. In a large bowl, mix together the baking soda, flour, baking powder, brown sugar, salt and cinnamon.

2. In another bowl, whisk together the eggs, buttermilk, sour cream and melted butter; add the flour mixture and stir JUST until the flour is moistened.

3. Stir in the grated apple.

4. Drop a scant 1/4 cup of batter onto a hot, lightly greased griddle.

5. Cook, turning once until golden brown
