An entire herb-friendly meal from tarragon to mint

Appetizer: Fresh Herb Dip

Ingredients:

• ¾ cup fat-free mayonnaise

• ¾ cup reduced-fat sour cream

• ¼ cup minced fresh parsley

• ¼ cup minced fresh chives

• 2 tablespoons minced fresh tarragon

• 1 tablespoon lemon juice

• 2 teaspoons minced garlic

• 1/8 teaspoon salt

• 1/8 teaspoon pepper

• Assorted fresh vegetables (for dipping)

Directions:

1. In a bowl, combine the first nine ingredients; mix well. Cover and refrigerate for one hour. Serve with fresh vegetables.

Side Dish: Roasted Roma Tomatoes and Garlic

Ingredients:

• 8 roma (plum) tomatoes, halved

• 12 cloves garlic, peeled

• 4 tablespoons olive oil

• ¼ cup chopped fresh basil leaves

• Salt and pepper to taste

Directions:

1. Preheat oven to 400°F

2. Place the tomato halves in a shallow baking dish in which they can all fit in snugly side by side. Insert the whole cloves of garlic in between the tomatoes. Brush olive oil over the top and sprinkle with basil. Season with salt and pepper.

3. Bake uncovered for 35-45 minutes, until tomatoes have softened and are sizzling in the pan with the edges slightly charred. Serve while hot.

Main Course: Sautéed Chicken Breasts with Fresh Herbs and Ginger

Ingredients:

• 2 tablespoons vegetable oil

• 2 boneless, skinless chicken breast halves (about 6 oz. each)

• Kosher salt and freshly ground black pepper

• Juice of ½ lime (about 1 tablespoon)

• 3 tablespoons chicken broth

• 2 teaspoons finely grated ginger

• ¼ cup packed fresh basil leaves, torn

• 2 tablespoons packed fresh mint leaves, torn

Directions:

1. Heat the oil in a medium skillet over medium-high heat until shimmering. Season both sides of the chicken breasts with salt and pepper and place them skin side down in the pan. Cook, turning once, until firm to the touch, about five minutes per side. Transfer the chicken breasts to a plate.

2. Add the lime juice to the skillet and scrape up any browned bits that cling to the pan with a wooden spoon. Add the chicken broth and ginger and bring to a boil. Off the heat, add the basil and mint to the pan and swirl the pan to combine.

3. Divide the chicken between the 2 plates and spoon the herb sauce over the chicken.

4. Serve and enjoy!

Dessert: Mojito

Ingredients:

• 1/2 teaspoon confectioners' sugar

• 1/2 lime, juice

• 1 sprig fresh mint, crushed

• 1/2 cup crushed ice

• 2 fluid ounces white rum

• 4 fluid ounces carbonated water

• 1 sprig fresh mint, garnish

Directions

1. In a highball glass, stir together the confectioners' sugar and lime juice. Bruise the mint leaves and drop into glass. Fill glass with crushed ice and pour in rum. Pour in carbonated water to fill the glass. Garnish with a sprig of mint.
